ORGANIC CHOCOLATE PARFAIT

Starting this whole collection with Crème Fraîche... the ingredient that makes me nostalgic and I've been wanting to play with it for ages...

Fresh cream from the dairy that was allowed to sour naturally in the past... the one that makes the lightest scones and fluffiest pancakes, and gives just the right balance of acidity and creaminess to basically everything.

In former days cream, unless eaten straight away, was allowed to sour naturally and become thicker, richer and slightly acid... and this is exactly what our lemonade cake is tightly wrapped in.

Do not confuse it with the soulless cream - crème fraîche is sour cream’s more sophisticated yet mild-mannered velvety French cousin.

Our Parfait comes from the French word meaning "perfect." Originating in France in the 19th century, parfaits were celebrated as a simple yet sophisticated dessert, with frozen cream served in a glass. As part of France's café culture, parfaits became popular as an indulgent yet light treat, exactly what I was hoping you to serve during the warm summer months.

The rich, velvety and smooth chocolate organic parfait is hidden in our crème fraîche, and generously showered with fresh raspberries and raspberry syrup. It's quite a substantial summer dessert, but easy to be enjoyed after a full meal...
